This recipe comes from my huge sister. Every fall, we get collectively and make about 20 of those pies to make use of at Christmas, give as presents or freeze for surprising firm. —Pat Menee, Carberry, Manitoba

  • 4 celery ribs
  • 4 medium carrots
  • 2 massive onions
  • 2 garlic cloves, peeled
  • 4 kilos floor pork
  • 2 kilos floor veal
  • 2 kilos bulk pork sausage
  • 1 can (14-1/2 ounces) hen broth
  • 1/2 cup minced contemporary parsley
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1 teaspoon dried basil
  • 1 teaspoon dried rosemary, crushed
  • 1 teaspoon cayenne pepper
  • 1 teaspoon floor mace
  • 1 teaspoon floor cloves
  • 1 cup dry bread crumbs
  • Pastry for 4 double-crust pies (9 inches)

  1. Coarsely chop the celery, carrots and onions; place in a meals processor with garlic. Cowl and course of till finely chopped; put aside.
  2. In a stockpot or two Dutch ovens, prepare dinner greens, pork, veal and sausage till meat is now not pink; drain. Stir in broth, parsley and seasonings. Cowl and prepare dinner over low warmth 20 minutes. Stir in bread crumbs.
  3. Preheat oven to 400°. Line 4 9-in. pie plates with backside crusts; trim pastry even with edges. Fill every with about 4 cups filling. Roll out remaining pastry to suit tops of pies; place over filling. Trim, seal and flute edges. Minimize slits in pastry.
  4. Cowl edges of pies loosely with foil. Bake for 25 minutes. Scale back warmth to 350°. Take away foil and bake pies 15-20 minutes longer or till crusts are golden brown.
Freeze possibility: Cowl and freeze unbaked pies. To make use of, take away from freezer half-hour earlier than baking (don’t thaw). Preheat oven to 400°. Place pie on a baking sheet; cowl edges loosely with foil. Bake 25 minutes. Scale back warmth to 350°. Take away foil. Bake pie 50-60 minutes longer or till crust is golden brown and a thermometer inserted in middle reads 165°. Yield: 4 pies (8 servings every).
